FORMULATION AND EVALUATION OF HERBAL JELLY FROM PSIDIUM GUAJAVA LEAVES EXTRACT FOR IMMUNE BOOSTING ACTIVITY

Abstract :

Guava (Psidium guajava) leaves are rich in bioactive compounds such as flavonoids (e.g., quercetin), tannins, polyphenols, and vitamin C, which possess potent antioxidant, anti-inflammatory, and immune-modulating properties. These compounds enhance immune function by neutralizing free radicals, supporting cellular repair, and reducing inflammation, making guava leaves a promising natural ingredient for immunity enhancement.
1. This study aimed to formulate a palatable and shelf-stable herbal jelly infused with guava leaf extract. Guava leaves were collected, dried, and extracted using a hydroalcoholic solvents through method like Soxhlet extraction to ensure optimal yield of active compounds. The jelly was then prepared using natural gelling agents (e.g., gelatin), sweeteners (e.g., sugar), and preservatives while ensuring the extract’s bioactivity remained intact.
2. The prepared herbal jelly underwent physicochemical analysis to measure pH, viscosity, and total soluble solids. Antioxidant assays such as DPPH was performed. Microbial stability tests ensured the product was safe for consumption over a specified shelf life.
3. In conclusion, this study demonstrates that guava leaf extract can be effectively utilized in functional food products such as herbal jellies. This innovative product offers a natural and convenient way to support immune health, meeting the demand for plant-based nutraceuticals in the growing wellness market.
